Chick Pea Salad with Coriander

I am headed out of town for a week so I am leaving you with my favorite new recipe to taste for yourself. It’s a very simple recipe–5 minutes to prepare–and makes a great start to any meal.

If you’re a garbanzo lover, you can’t go wrong here. The medley of flavors is light and the lemon juice adds a tasty tang. For as little time as it takes to prepare, you might as well give it a go.

Chick Pea Salad with Coriander (Cilantro)

2 cans cooked Chick Peas (800g)

1 handful fresh coriander (cilantro) leaves, chopped

1 small onion, chopped

2 hardboiled eggs, cut into small bits

1/2 C extra virgin olive oil

1/3 C lemon juice

salt and pepper to taste

Just mix together all the ingredients in a large bowl. Stir before serving, as the oil will settle to the bottom.

    hey i’m sure this is some good stuff, but nothing beats lea’s tunisian cuisine. i need to know how to make that dip! something sashwee (sp), lulapalooza, or bumble bee tuna – you know the one i’m talking about. here!
